I had new JELD WEN french doors installed recently and the compression seal has gaps allowing air from the outside in. Can I add another type of weatherstripping to help seal perhaps some type of wool?

With a new door installed, you should not have gaps on the seal. I would first contact the installer to make the adjustment and if that does not work contact Jeld Wen.
