Trimming a bi fold door

A quick learner from Arkansas says:
I've got an "oversized" rough opening that has jamb installed. The desired bifold has a gap on both sides and in the middle. Is it acceptable to use a "stop" i.e. Molding at each jamb side so that when I adjust the door in the center the gap on each side is not visible ??
Opinion would be appreciated because I don't want to remove and rebuild the entire door. Can you offer any other solution ?

As long as you use molding that matches, or doesn't stand out from the room, I think it should be fine.
