hopefully the attached pictures can help you tell me what i need to measure in order to get the right replacement parts for our windows.

The poles are 5/8 inches diameter and they are 31 inches long. (not counting the red tip.

How do i remove the pivot shoe to measure and replace it?

It looks like you have an aluminum thermal break window. The balance could possibly be our Series 600 spiral balance, but you would need to compare your measurements to confirm.
The photos of your pivot shoe aren't clear, but it might be our 15-047 or 15-048. Watch the video below for instructions on how to remove it.
