I would like to upgrade my casement window cranks to folding handles for better window shade clearance. I'm looking at the 'Truth Folding Handle And Cover Kit, Product Code: 39-107FK'. Can you confirm that this part will work with my current operator?

Yes, I believe it should. It looks like you have the 39-107 cover now, which is what the 39-107FK can replace.
