How do I get the old Stanley roller assembly off and install the 23-041? Do I need to bend the bracket? or retainers somehow?

First, lay the door down on a flat, level surface. If it's not screwed on, simply use a pair of needle nose pliers to gently twist the hooks out of the frame. Reverse the process to install.

Are the hooks the ones on the bottom of the assembly, left and right side or top or all 4?

There are tabs/hooks and screw holes on all four corners of the roller housing. Whether your roller uses screws or the tabs depends on if the door has cut outs for the tabs/hooks to lock into, or screw holes. The tabs/hooks are on all four corners so that they can be used left or right side of the door. You should be able to see if the top guides have them as well as the bottom rollers.

With most of those you can remove the tabs by inserting a screwdriver up into the rail from the bottom and pressing on the tab to line it up with the slot.
