I know the width is 3/16 on replacing the pile weather stripping but what measurement I need is the height of the pile?

If you indeed have a wool pile, the height of the pile is literally just the height from the base to the top of the wool. See the cross-section view of the 58-179 below as an example. Also watch the video for more information.
