Ah, I'm sorry for overlooking that particular detail. That may be an issue, actually.
The 82-002 is only designed to work on 1-1/8" doors at most. 2-7/8" is actually extraordinarily thick for a door like this. I don't think anything we sell will fit properly. Now, that doesn't mean that the 82-002 won't still work for you, but you'll have to get creative.
The first and most obvious change will be to use longer screws for the installation. Your old screws should work just fine to that end. The second change will be to adjust the position of the latch hook so that it lines up with the slot in the door where it's meant to poke out. This can be done by simply packing it out. I've used washers before and found it to be a pretty safe bet.
Sorry again for overlooking that detail. Hopefully this solution helps, but it's hard to say. At almost 3" thick, that really is one huge door.
