Reversed 82-240?

I have the 82-240 but it's style is "up to lock" and "down to unlock". So when the door is locked my dogs can unlock the door but pushing it down. Do you have a thumb lever (same dimensions) that is "down to lock"?

What you describe sounds like it has more to do with the inside mortise lock than the thumb lever. You should see if you can flip your mortise lock upside down. That should reverse the operation of the thumb lever.
