We know we need to replace the operator on this window, but we would like to replace it with a handle that folds in. We think this is a Vetter window. Do have any window operators that have folding handles they would work?

I see you were looking at our 39-083. This certainly looks close, though you would need to confirm how well the arm size matches. As for a folding handle, see our 39-205. This is compatible with the 39-083.
