Based on your photos, you have either our Series 351 or Series 390. The only difference between them is the size of the bottom fitting, which is indicated on their respective store pages. You'll need to measure your bottom fitting to confirm which one is the better match.

How Do I figure the weight? Does it come from that stamp?

Yes, the stamp on your old balances directly correlate to your stamps. In your case, 28 3 would match our 2830 and 27 1 would match our 2710.
