Part 81-018 is what I need. I see it also comes in a stainless steel version. What does the stainless steel get you over the regular metal part? Do the roller wheel bearings last longer?

Not particularly, no. The benefit of the stainless steel 81-149 is that it holds up better in salt air environments and in harsh weather. If those aren't a concern for you, though, then it has no benefit over the 81-018.
