My window channel is stamped 26-5. It matches the 795-27 model. Which weight option do I choose?

It's hard to say, that's not a typical stamp for a Series 795 channel balance. Fortunately, it's easy enough to figure out. All you need to do is weigh your sash and cross-reference the weight to the list of options we show under the S795-27.
