I purchased the mortise style handle set #82-080 - which mortise lock / striker plate do I need to purchase that will correspond to this handle set?

There's a few different possibilities; it depends on what your door originally had. The 82-238 and the 82-268B are the most common mortise locks for this handle set. See if either matches what you have.

If I go with the 82-238 double hook mortise lock, will the 89-030 multi=point striker work with this lock?

Yes, the 89-030 strike plate is compatible with the 82-238.
